Carolina H. Diaz

Carolina H. Diaz, 86, entered eternal rest on Saturday, October 9, 2021,
at Doctors Hospital at Renaissance in Edinburg. Carolina was a loving friend,
sister, wife, mother, grandmother, and great-grandmother, she will be missed by
all who knew her.
Mrs. Diaz was born in Kenedy, Texas, and would migrant up north to work in
picking crops with her family. Her love for gardening was as strong as her love as a
devout Catholic Church member. She married Simon Jose Diaz on January 11,
1958 at Sacred Heart Church in Edinburg. As much as she loved the church, she
loved her children more and dedicated her life to their upbringing.
She is preceded in death by her husband of 62 years, Simon Jose Diaz, her son,
Jesse Diaz, her parents Agapito and Manuela Huerta, and two brothers, Francisco
and Raymundo Huerta.
Mrs. Diaz is survived by seven children, Israel (Maria Christina), Maria
Magdalena, Simon, Ruben (Dora), Irene (Eduardo) Luna, Marcos all from
McAllen and Esmeralda (Louis) Valadez from San Antonio; 18 grandchildren,
Nicole (Rob) Brown, Israel "Sonny" Diaz, Philip, Amanda, Thomas, and Bryan
Mery, Ruben Cruz, Daniela Carolina Diaz, Xavier and Sarah Luna, Samantha,
Savannah, Sabrynah, Christian, Dylan, and Ryan Diaz, Louis Simon, and Daniel
Valadez; two great-grandchildren, Alexis Symonne and Roselyn Oliva Brown; and
her brother, Wes Huerta.
Visitation will be held from 5 to 8 p.m., with a 6 p.m. rosary Wednesday, October
13, 2021, at Memorial Funeral Home, 208 East Canton in Edinburg. Funeral
service will take place at 12 p.m. Thursday, October 14, 2021, at Sacred Heart
Catholic Church in Edinburg. Interment will follow at Valley Memorial Gardens in
McAllen.
Funeral services are under the direction of Memorial Funeral Home in Edinburg.
